Riesling and Basil Vinaigrette" My wife wants to bathe in it "

This dressing is light and crisp with a touch of Riesling sweetness. A superb dressing on organic salad greens. Superb in saute#233;és, on crab and oysters or used as a marinade for chicken and fish.

We like to:

  • Sauté organic swiss chard with julienne corrots, sliced onion and garlic.
  • Splash with a touch of Riesling & Basil Vinaigrette
  • Toss and cover to steam for 30 seconds
  • Then serve when shard is just slightly wilted.





    Smoked Jalapeno Barbeque

    This BBQ has just the right amount of heat and sweetness. Locals agree that it is a fabulous addition to any bbq or kitchen.

    Smoked Jalapeno chicken

    Preheat oven to 400 deg.

    Marinate 6 chicken thighs or breasts in 1/2 cup of smoked jalapeno bbq for at least 1 hour. Place in oven skin side down for 10 minutes. Turn skin side up then baste with pan drippings and additional sauce. At this point sprinkle with Hell Fire for some additional spice. Bake for an additional 8 minutes or until fully cooked. For crispy skin broil skin side up on upper oven rack while basting for an additional 3 minute.

    Smoked jalapeno vegetables

    1/2 white onion sliced or 5 chipolini onions halves

    1/2 red onion sliced

    1 zucchini course dice

    5 asparagus spears

    1/3 diced eggplant if desired

    Toss in bowl with 1/3 cup BBQ

    Marinate for several minutes

    Pre heat large sautéé pan with 1 tablespoon of olive oil until just before smoke.

    Pour into pan then toss for 1 minute

    Add 1/3 cup cold water

    Cover to steam for 2 minutes or to desired doneness.





    Horseradish & Carrot Mignonette

    This dressing was originally used chilled or slightly frozen for raw oysters at the Orcas Wine Company. Now The Sunflower Café on Orcas uses it as there proffered oyster sauce.

    We like to use it as a marinade for halibut.





    Blackberry & Lavender Syrup

    In contrary to Dan pessimism it is really good on vanilla ice cream.

    Fantastic on crepes and waffles or granola with yogurt and fruit. We bake with it, add it to crem brulee and use it as a sweet addition to hot or cold tea. Great with vodka on ice.

    Young Devon Stanzione loves it on his waffles in the morning before school.

    This syrup turns an average dessert into something extraordinary and unique.
